Ingredients:

For Cornbread Crumbles:

  • 1 cup self-rising cornmeal
  • ½ cup self-rising flour
  • ¾ cup buttermilk
  • 2 eggs
  • 2 tablespoons vegetable oil

For Cornbread Dressing:

  • 8 tablespoons butter
  • 3 medium onions (chopped)
  • 4 celery stalks (chopped)
  • 2 teaspoons dried sage
  • 1 teaspoon poultry seasoning
  • ¾ teaspoon salt
  • 3 pieces of crumbled toast
  • ½ teaspoon pepper
  • ½ cup milk
  • 3 eggs lightly beaten
  • 2 ½ cups of chicken broth

Instructions:

  • Preheat oven to 400℃
  • Take a medium bowl, add in all the ingredients for cornbread
  • Pour in a lightly greased 9-inch cast iron pan
  • Bake for 20-30 minutes
  • Crumble before use
  • In a large pan, heat butter over medium heat
  • Add celery sticks and onions. Cook until they are soft
  • Add sage, poultry seasoning, salt, pepper to the onion mixture
  • Take a large bowl. Combine crumbled cornbread and toast
  • Whisk together milk and eggs and add to the bowl
  • Stir in 2 cups of chicken broth
  • Stir in the onion mixture
  • Transfer to a greased baking pan. Cut butter into small pieces and scatter over the dressing
  • Bake at 350℃ for 30 minutes, until lightly golden on top.
